I have a friend who has done these-- the Cannonball Baker run as distinguished from the auto "Cannonball." I know he did one on a vintage Harley with a suicide shifter-- guy is probably close to 80 years old now- I'm 70 and I think those old Harleys were hard-tails. Takes a real hardcore rider to do that run. He's into those long endurance events, Paris-Dakar, Carrera-Panamerica and did the 'round the world in 80 Days in vintage cars as well, specially prepped for the conditions.
We did the Targa-Florio some years ago in a vintage car-- it was like a slow rolling sun tan in Sicily but still great fun and stuck to the B roads -mostly mountains and small towns/villages along the perimeter of Sicily. That might be a fun run on a motorbike- the Sicilians are absolutely fanatical about motorsports and treated us like rock stars.

The Cannonball people try to do as few big roads as possible. We did spend a long time on I-80 in Utah, in order to stop at the Bonneville Salt Flats, on one of the rides. You see a lot of the country you'd never otherwise visit.
