Do you mean those insulators, between the intake on the head and the carb itself?
If so, those spacers are to insulate a bit the heat that passes from the hot engine head to the carb itself, a heat that can cause the fuel in the mixture to evaporate/"boil".
I remember buying a set over at Mark Huggett, made of some kind of Bakelite and you need another set of gaskets (made them myself).
Very helpful in hot days.
