Here are my thoughts after doing a ton of jetting myself. Maybe Vech can chime in here as well.

Dave is right that the 9-10 carbs are worth far more than standard carbs and you may want to think about selling them and buying the proper carbs.

My suggestion would be to start with the R60 settings ...

Jef,

I do not have a valve handy to measure, but I can tell you that the valve (M 59 D 111) is the same for the R57, R63, R16 and R17. That might help others who have a valve out of one of their motorcycles to measure it!

The answer to that is yes.

It has been a while since I have done it, but I can remember for certain that the rear mounts are easier, the front mounts need some fiddling and the top mount is best changed by removing the gas tank.

Again, it has been a long time but I did do it once with the motor ...

I use a small strap wrench that I have. The rubber could be to blame as well. The new aftermarket rubber is not very good.
