I just received an email pointing me to http://www.palatina-vintage-bike-event.de. (The website has English translations.)

These folks run small (3-4 day) tours in the local area of Germany's southern Rhine: the Schwarzwald (Black Forest), the beautiful and rural state of Rhineland-Pfalz (Palatinate) and including crossing over into French Alsace.

They have a fleet of restored /5s (and some newer BMWs - R80GS, R100RS - and a couple small Hondas) that they are using for these tours, including several R75/5s. This seems to be a unique offering.

(I keep a modern bike with a friend in Karlsruhe, which is between the Schwarzwald and the Pfalz, and just over the Rhine from Alsace, and I can tell you that this is a very beautiful and generally unknown area for riding. No spectacular passes like in the Alps, but just the right thing for enjoying an older bike.)

Anyway, I have no affiliation with these folks, but this seems like such a great idea!
